Every share follows the same path, and we walk it with you the whole way.
Raised
Our cattle are raised on a partner ranch in Woodruff, Utah using regenerative grazing practices.
Harvested
Animals are humanely transported and then harvested at Bar W Meat Processing in Nephi.
Dry Aged
The beef is professionally dry aged for two weeks to improve tenderness and flavor.
Custom Processed
You will receive a phone call from us to customize your cuts before processing begins.
Vacuum Sealed
Every cut is professionally packaged, flash frozen, labeled, and freezer ready.
Picked Up
You will pick up your finished beef at Fold of Liberty Farms in Lake Shore.

More than a package

Rather than purchasing individual steaks or packages from the grocery store, you’re purchasing a portion of an entire animal.
That means your freezer is stocked with a wide variety of premium cuts, everyday favorites, and slow cooking classics.
Instead of shopping every week, many families purchase enough beef to last six months to a year.

You don’t have to buy a whole share. Individual cuts are stocked in our farm shop and picked up right here at the farm — a share fills a freezer, the shop fills this week’s dinners.
Why don’t you pay by the
packaged pound?
Because nobody knows what the packaged weight will be until your beef is cut — and it changes with the choices you make. Bone-in steaks weigh more than boneless. Ask for more ground beef and you lose the weight of the bones it came off. Two identical animals can leave the processor with different box weights.
Hanging weight is the one number that doesn’t move: it’s weighed on a certified scale at the processor before a single cut is made. That’s why it’s the standard the whole beef industry prices from, and why every share here is quoted the same way.
- After harvest, the hide, head, hooves, and internal organs are removed. The remaining carcass is called the hanging weight.
- During dry aging, moisture naturally evaporates while the beef becomes more tender and flavorful.
- Finally, the butcher trims, cuts, and packages your beef.
So the beef that comes home in boxes weighs roughly 40 percent less than the hanging weight your price is figured from. That is the number to plan your freezer around, and it is why the table above lists an estimated box weight beside every hanging weight.

Once your animal is weighed, we email you a secure link to pay the remaining balance online, figured from the actual hanging weight.
Pickup day
Freezer space at the farm decides how this works: we either email you a set pickup date or open a calendar so you can choose your own day and time. Collect your beef in Lake Shore and take home a freezer full of premium Utah beef — or, if you need longer, we can store it at the farm for an added fee.

All beef is picked up from Fold of Liberty Farms, Lake Shore, Utah.
How pickup is scheduled depends on freezer space at the farm. When space is tight we email you a specific pickup date, usually the day we collect your beef from Bar W. When we have room, we open a calendar so you can choose the day and time that suits you.
Need longer than that? We can keep your beef in our freezer past your pickup date for an additional storage fee. Let us know before the date so we can arrange it.

How much freezer space do I need?
A general rule is approximately one cubic foot of freezer space for every 30 to 35 pounds of packaged beef. Whole Beef: 12 to 18 cubic feet. Half Beef: 6 to 9 cubic feet. Quarter Beef: 3 to 5 cubic feet.
Is this grass finished?
Yes. Our cattle are 100 percent grass fed and grass finished.
Can I customize my cuts?
Absolutely. Every order is custom cut for your family.
What if I have never purchased a beef share before?
That is perfectly okay. We will personally walk you through the cut sheet and answer any questions before processing begins.
How long will my beef last?
When vacuum sealed and kept frozen, beef typically maintains excellent quality for about 12 months, and often longer when consistently stored at 0°F or below.
When do I pay?
A deposit reserves your share. After your animal is processed and weighed, we email you a secure link to pay the remaining balance online, figured from the actual hanging weight. Paying that balance is what releases your beef for pickup, so there is nothing left to pay when you arrive at the farm.
Do I pay sales tax?
Yes. Applicable Utah sales tax is calculated on your final balance once the actual hanging weight is known, and is included in that online payment. No sales tax is charged on your deposit.
How much beef actually comes home in boxes?
Plan on roughly 40 percent less than the hanging weight you are billed on, because bone, trim, and the moisture lost to dry aging all come out at the processor. The estimated box weight for each share size is listed in the pricing table above. Yield varies by animal and by how you have your beef cut.
